I love LOVE this dough recipe! It makes healthy wholesome bread, anyone can do it -even if they have never attempted baking before- and it doesn’t require any skills when it comes to shaping the rolls. Your hands never touch the dough, so no messy fingers and no kneading. Need I say more?

Delicious in the morning, in the tiffin or with your homemade soup.

The wonderful thing about this dough is that it can be kept in the fridge for up to 5 days without getting spoiled or starting to taste or smell yeasty. So, you effectively have fresh bread whenever you wish. Now that is like magic!

I have never had great success with using dried yeast, so I always use fresh yeast that I buy either at Farmers Choice in Porvorim or at Geeta Bakery in Panjim (only relevant for Goans, I know). I buy half a kilo, break it into smaller pieces and freeze it in a Tupperware freezer mate container or in a freezer bag.

You can make this recipe vegan by exchanging the honey for 1.5 tbsp caster sugar.

NOTE: This recipe requires min. 8-12 hours of refrigeration, so if you are in a hurry, this recipe isn’t for you. Why don’t you try my other oatmeal bread instead?

    Start by measuring out the oats. You might worry that it’s a lot (and it is!) but there are no typos here. 1/2 kilo of oats it is.

    Add the water, yeast, honey and salt. Mix well with your hand mixer or stand mixer until the yeast is completely dissolved.

    Slowly add both the flours while mixing. It will become a very sticky and wet dough. Keep mixing for approx. 5 min.

    Cover with cling film and set to rise in the fridge for min 8-12 hours (or up to 5 days)

    The dough will have risen a bit during the night.

    The next morning (or whenever you are making it) line your oven tray with a sheet of baking paper (it also works to butter the tray instead, but it is more messy and the rolls get a bit harder underneath) and place the dough with a table spoon onto the baking paper. Don’t worry about the shape. They may not be pretty but they are definitely tasty. And healthy!
